Gerbais Extra Brut Grains de Celles Rose

An organically farmed blend of 55% Pinot Noir and equal parts Chardonnay and Pinot Blanc from Celles sur Ource (more Burgundian terroir than Champagne). Native yeast fermented in steel tanks, rested on its lees for 30 months with 5% reserve vintages blended in. Bright cherry and cranberry aromas, white pepper, mineral, textured, dry, elegant bubbles.
