COS is on the most southern side of Sicily and makes some truly sought after reds and whites. Founded in 1980 by Giambattista Cilia, Cirino Strano and Giusto Occhipinti - they decided to name the winery after their last initials. The winery itself dates back to the 1880's and they have worked hard to preserve the culture surrounding it.
