Filipa Pato is a winegrower in Bairrada. A graduate of the University of Coimbra as a chemical engineer, she refined her skills working harvests in Bordeaux, Mendoza, Margaret River, and right at home in Bairrada with her father, Luis Pato, the Baga Rebel. (In 2020 Filipa was elected Winemaker of the Year in Portugal by the Revista de Vinhos, the first Portugese woman to earn the title in 30 years.)

Williams Wouters is a chef sommelier/ restaurateur. Hailing from a restarateuring family from Antwerp, Belgium.

Together, they are Filipa Pato & William Wouters. Their philosophy is: to create authentic wines without makeup, wines that express the true nature of the vineyards from which they come. They focus on indigenous grapes only.

An estate that was built back in 1889 is now run by Aurélien Laherte - a young trailblazing natural winemaker in a stuffy region making waves with a cohort of other like-minded youthful producers in Champagne.

30 year old vine Chardonnay from the family's chalkiest soils in Chavot and Epernay comes this racy and finesseful Blancs de Blancs, the only one in the Laherte lineup.

The OG'st of Champagne's in the store. J. Lassalle was established in 1942 and in 1982 when he passed, the estate was left to his wife Olga and daughter Chantal. Chantal's daughter Angeline Templier joined in 2006 as the winemaker.
